Ingredients:
24 large crimini mushrooms, stems removed
1 pound Italian sausage, removed from casing
1 yellow onion, diced
1 cup shredded Mozzarella cheese
1/4 cup Italian bread crumbs
1 clove garlic, minced
1 tablespoon fresh parsley, minced
Instructions:
Preheat the oven to 350 degrees Fahrenheit and spray a 9×13 baking dish with vegetable oil spray.
Remove the stems from the mushrooms and scoop out the inside using a small spoon to create space for the filling.
In a large skillet, combine the scooped mushroom filling (discard the stems), sausage, and diced onion. Cook over medium heat until lightly browned, stirring occasionally, for about 6-8 minutes. Drain any excess fat.
Stir in the shredded Mozzarella cheese, bread crumbs, minced garlic, and minced parsley.
Spoon the sausage mixture into each mushroom, creating a rounded top.
Place the stuffed mushrooms in the prepared baking dish and bake for 12-15 minutes, or until the mushrooms are cooked through and the filling is heated and slightly golden.
