4 cod fillets
1/4 cup melted butter
1 tablespoon olive oil
2 lemons, thinly sliced
3 garlic cloves, minced
1/4 cup chicken broth
2 tablespoons fresh parsley, minced
Salt and pepper to taste
Directions
1. Start by greasing your slow cooker with a bit of the melted butter.
2. Layer the lemon slices on the bottom of the slow cooker.
3. Place the cod fillets on top of the lemon slices, ensuring they don’t overlap.
4. In a small bowl, combine the remaining melted butter, olive oil, minced garlic, chicken broth, salt, and pepper. Pour this mixture over the cod fillets.
5. Cover and cook on low for 2-3 hours, or until the fish flakes easily with a fork.
6. Once done, sprinkle the fresh parsley over the top for a burst of color and flavor.
7. Serve the cod with the cooked lemon slices and extra sauce from the slow cooker spooned over the top.
Variations & Tips
For an extra layer of flavor, you can add a splash of white wine to the broth mixture. If you prefer a bit of spice, a pinch of red pepper flakes will do wonders. Substitute the cod with any firm white fish like halibut or haddock. For a complete one-pot meal, you can add baby potatoes and green beans to the slow cooker, arranging them around the fish.
