Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until they are golden brown, about 8-10 minutes.
Add the minced garlic to the mushrooms and sauté for an additional 1-2 minutes. Season with salt and pepper to taste.
Remove the mushroom mixture from the skillet and set aside.
Butter one side of each slice of bread. Place four slices, buttered side down, on a baking sheet.
Top each slice with a portion of the sautéed mushrooms and two slices of Swiss cheese.
Place the remaining bread slices on top, buttered side up.
Preheat a skillet or griddle over medium heat. Cook the sandwiches until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
Remove from heat and let cool slightly. Garnish with fresh parsley if desired, and serve warm.
Variations & Tips
For a bit of a kick, try adding a pinch of red pepper flakes to the mushrooms while sautéing. You can also experiment with different types of cheese, such as Gruyère or provolone, for a unique twist. If you prefer a meatier version, add a few slices of cooked bacon or ham to each sandwich. For a vegetarian version, consider adding some sautéed spinach or roasted red peppers for extra flavor and color.
