Thinly slice the steak and season it with a pinch of salt and pepper.
Slice the bell peppers and onion into uniform strips.
Step 2: Make the Sauce
In a small bowl, mix soy sauce, oyster sauce, sugar, and the cornstarch slurry (cornstarch + water). Set aside.
Step 3: Sear the Steak
Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.
Add the sliced steak in a single layer and cook for 2–3 minutes per side until browned. Remove and set aside.
Step 4: Cook the Vegetables
Add another tablespoon of oil to the pan. Toss in the garlic, ginger, and sliced onions. Sauté for 2 minutes until fragrant.
Add the bell peppers and stir-fry for another 2–3 minutes until slightly tender but still crisp.
Step 5: Combine and Simmer
Return the cooked steak to the pan. Pour in the prepared sauce and mix well.
Stir everything together and let it simmer for 2 minutes until the sauce thickens and coats the ingredients.
Step 6: Serve
Transfer to a serving dish and garnish with sesame seeds or sliced green onions if desired. Serve hot with steamed rice or noodles.
