Directions
Place the sliced kielbasa into your slow cooker.
In a bowl, mix together the chopped apples, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, and nutmeg.
Pour the apple mixture over the kielbasa in the slow cooker.
Add the chopped onion on top of the apple and kielbasa mixture.
Cover and cook on low for 4–6 hours, stirring occasionally, until the apples are tender and the kielbasa is glazed.
Serve warm, garnished with a sprinkle of fresh parsley if desired.

Add a pinch of red pepper flakes or smoked paprika for a spicy kick.
Reduce the mustard and vinegar slightly for a milder flavor (great for picky eaters).
For a fruitier twist, stir in a handful of dried cranberries or raisins during the last hour of cooking.
