Slow Cooker Cheddar Corn
Ingredients:
16 oz frozen corn kernels
12 oz frozen corn kernels
8 oz cream cheese, cubed
1 cup shredded cheddar cheese
1/4 cup butter
1/4 cup heavy cream
1/2 tsp salt
1/4 tsp black pepper
Instructions:
Combine all ingredients in the crock pot and stir to combine.
Cover and cook on low for 3.5-4 hours, stirring halfway through, until hot and creamy.
Stir well before serving. Taste and adjust seasoning as needed.
Optional Add-Ins:
Cooked crumbled bacon
Diced bell peppers or jalapenos
Chopped scallions or chives
Chili powder, smoked paprika
Hot sauce or pickapeppa sauce
Notes:
Can easily double or triple this recipe for a crowd. Just use a larger slow cooker.
You may need to add a bit more cream if it gets too thick after cooking.
