- 1 pound dried Northern beans
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable or chicken broth
- 2 cups water
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- Optional: ham hock or bacon for added flavor (if desired)
Instructions:
- Rinse the dried Northern beans under cold water and remove any debris or stones. Place the beans in a large bowl and cover them with water. Allow them to soak overnight. Alternatively, you can do a quick soak by placing the beans in a pot with water, bringing it to a boil, and letting them sit for 1 hour. Drain the soaked beans before using.
