Instructions:

  1. Prep the Ingredients:
    • Rinse the peas: Start by rinsing your dried split peas under cold water until the water runs clear. This removes any dust or debris and ensures your soup has a smooth, creamy texture.
  2. Combine Everything in the Slow Cooker:
    • Add the ingredients: In your slow cooker, combine the rinsed peas, ham bone or diced ham, chopped onion, carrots, celery, and minced garlic.
    • Season the soup: Add the bay leaf, dried thyme, and 6 cups of chicken broth. Stir well to mix the ingredients and flavors.
  3. Slow Cook to Perfection:
    • Set it and forget it: Cover your slow cooker and set it to cook on LOW for 8 hours. This slow method allows the split peas to soften into a thick, creamy base while the ham becomes tender and flavorful.
  4. Final Touches:
    • Finish the soup: Once the soup is done, remove the ham bone (if used) and shred any remaining meat. Return the shredded ham to the soup, discarding the bone and the bay leaf.
    • Season to taste: Taste the soup and season with salt and pepper as needed. Adjust according to your preference.
  5. Serve and Enjoy:
    • Ladle and serve: Stir the soup well and ladle it into bowls. Serve hot with your favorite sides, such as crusty bread or a warm buttered roll.
