Directions
1. Season the pork chops with salt and pepper on both sides.
2. In a large skillet, heat the olive oil over medium-high heat and sear the pork chops for 2-3 minutes on each side until browned. Transfer the pork chops to the slow cooker.
3. In a bowl, mix together the peach preserves, chicken broth, soy sauce, minced garlic, and Dijon mustard until well combined.
4. Pour the peach mixture over the pork chops in the slow cooker.
5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the pork chops are tender and cooked through.
6. Once done, remove the pork chops from the slow cooker and let them rest for a few minutes before serving. Spoon the peach glaze from the slow cooker over the pork chops before serving.
Variations & Tips
For a twist on this recipe, you can use apricot preserves instead of peach preserves. If someone in your family isn’t fond of peaches, this can be a great alternative. You can also add a touch of heat by including a teaspoon of crushed red pepper flakes in the peach mixture. For an extra veggie boost, try adding sliced onions and bell peppers to the slow cooker along with the pork chops.
