  1. Heat oil in a pan over medium heat. Sauté garlic and onion for about 5 minutes, until fragrant and translucent.
  2. Add the vodka and simmer for 5–7 minutes to reduce the alcohol.
  3. Transfer the garlic, onion, and vodka mixture to a slow cooker. Add the crushed tomatoes, heavy cream, salt, pepper, and oregano. Stir to combine.
  4. Cook on low for 4–5 hours or on high for 2–3 hours, stirring occasionally.
  5. About 30 minutes before the sauce is ready, cook the penne pasta until al dente. Drain and set aside.
  6. Taste the sauce and adjust seasoning if necessary. Gently stir the cooked pasta into the slow cooker sauce.
  7. Let the pasta and sauce simmer on warm for another 10–15 minutes.
  8. Serve hot, topped with grated Parmesan and fresh parsley or basil.
