Peel and smash the boiled eggs into pieces, then reserve them.
Mix white cheese, yogurt, mustard and chives. Salt and pepper to your liking.
Arrange the leeks in a serving dish and dab them generously with chive sauce.
Parsemez on top of leek with crushed eggs and a pinch of extra chives.
Serve cold or slightly warm.
