- Add the chopped onion to the skillet and cook until translucent, about 2-3 minutes.
- Add the minced garlic and sliced mushrooms, and cook until the mushrooms are tender and browned, about 5 minutes.
- Prepare the Creamed Spinach:
- Add the fresh spinach to the skillet and cook until wilted.
- Pour in the heavy cream and stir in the grated Parmesan cheese.
- Add the Italian seasoning and let the mixture simmer for a few minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Combine and Simmer:
- Return the cooked chicken breasts to the skillet, nestling them into the creamy spinach and mushroom mixture.
- Sprinkle the crispy bacon on top.
- Let everything simmer together for about 5 minutes, allowing the flavors to meld and the chicken to heat through.
- Serve:
- Transfer the smothered chicken to a serving platter, spooning the creamy spinach, bacon, and mushroom sauce over the top.
- Garnish with fresh parsley if desired.
- Serve hot, alongside your favorite side dishes like mashed potatoes, rice, or a simple green salad.
