Preheat Oven and Prepare Baking Sheet: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Cream Butter and Sugars: In a large mixing bowl, cream together softened butter, creamy peanut butter, granulated sugar, and light brown sugar until smooth and fluffy.
Add Wet Ingredients: Add eggs one at a time, beating well after each addition. Stir in pure vanilla extract.
Combine Dry Ingredients: In a separate bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add dry mixture to wet ingredients, mixing until just combined.
Form Cookie Dough: Roll dough into small balls, about 1 inch in diameter. Place on prepared baking sheet. Use a fork to gently press down on each cookie for a crisscross pattern.
Bake: Bake cookies for 10-12 minutes, or until light golden brown.
Cool and Serve: Remove cookies from oven and let cool on baking sheet for a few minutes. Transfer to a wire rack to cool completely. Enjoy!
