  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and lemon zest.
  3. Cut in Butter: Add the cold, cubed butter and cut it into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  4. Combine Wet Ingredients: In a separate bowl, mix the buttermilk, lemon juice, and vanilla extract.
  5. Bring Dough Together: Pour the wet ingredients into the dry ingredients. Stir gently until just combined — do not overmix.
  6. Shape Biscuits: Turn the dough onto a floured surface. Gently pat it out to about 1-inch thickness. Use a round biscuit cutter to cut out biscuits and place them on the prepared baking sheet.
  7. Optional Topping: Sprinkle a little sugar on top for extra sweetness and sparkle.
