🍠 For the Sweet Potatoes:
3 lbs sweet potatoes, peeled and cut into 1-inch chunks

½ cup (1 stick) unsalted butter

1 cup packed brown sugar

½ cup granulated sugar

1 tsp cinnamon

½ tsp vanilla extract

¼ tsp salt

½ cup water or orange juice (for extra brightness!)

🔎 Pro Tip: Cut potatoes evenly for uniform cooking!

1️⃣ Par-Cook the Potatoes
Place sweet potatoes in a large pot, cover with water, and boil 5-7 mins until slightly tender (not fully cooked). Drain.

2️⃣ Make the Glaze
In a saucepan, melt butter, then stir in sugars, spices, vanilla, salt, and water. Simmer 2-3 mins until slightly thickened.

3️⃣ Bake to Caramelized Perfection
Arrange potatoes in a greased 9×13 baking dish, pour glaze over top.

Bake at 375°F (190°C) for 45-50 mins, basting occasionally, until syrupy and golden.
