1. Make the Marinade:
In a medium bowl, whisk together the avocado oil, orange juice, agave syrup, orange zest, green olives, mint, smoked paprika, crushed black pepper, and cumin until well combined.
2. Prepare the Feta:
Pat the feta cheese dry with a paper towel. Cut into small, bite-sized cubes.
3. Marinate:
In a large shallow dish, spread a few spoonfuls of the marinade on the bottom.
Place the feta cubes on top. Pour the remaining marinade over the feta to ensure each cube is well coated.
4. Chill:
Cover and refrigerate for at least 2 hours. For deeper flavor, marinate for 4+ hours, stirring occasionally to recoat the cubes.
5. Serve:
Let the feta come to room temperature before serving to fully release its flavor.
