1. Prepare and Roast the Potatoes:
Preheat oven to 425°F (220°C).
Toss potato wedges in olive oil, garlic powder, paprika, Italian seasoning, salt, and pepper.
Spread on a baking sheet in a single layer.
Roast for 25–30 minutes, flipping halfway through, until golden and crispy.
2. Cook the Steak Bites:
Heat olive oil in a skillet over medium-high heat.
Add steak bites in a single layer. Sear for 2–3 minutes per side until nicely browned. Don’t overcrowd the pan—do it in batches if needed.
Reduce heat to medium. Add butter, minced garlic, and red pepper flakes. Stir to coat the steak in the butter mixture for 1–2 minutes.
Season with salt, pepper, and parsley.
3. Plate and Serve:
Serve the steak bites hot with roasted potatoes on the side.
Garnish with additional red pepper flakes and parsley if desired.
