Directions
Preheat oven to 400°F (200°C).
In a large bowl, mix soy sauce, sugar-free honey substitute, minced garlic, apple cider vinegar, olive oil, ground ginger, and black pepper to make the marinade.
Add chicken chunks to the marinade, coating them well. Marinate for at least 15 minutes, or up to 2 hours for deeper flavor.
Spread the marinated chicken evenly on a disposable aluminum tray.
Bake for 20-25 minutes, turning halfway through, until chicken is cooked and glaze caramelizes.
Remove from oven and sprinkle sesame seeds and sliced green onions on top if desired.
Serve hot with your favorite sides.
