Ingredients:
– 1 cup cream cheese, softened
– 1 1/2 cups all-purpose flour
– 1 cup granulated sugar, divided
– 1/2 cup unsalted butter, softened
– 1 teaspoon vanilla extract
– 1 tablespoon ground cinnamon
– 1 egg
– 1 teaspoon baking soda
– 1 teaspoon baking powder
– A pinch of salt
Instructions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
3. Add in the softened cream cheese and mix until well combined. Then, beat in the egg and vanilla extract.
4. In a separate bowl, combine the all-purpose flour, baking soda, baking powder, ground cinnamon, and a pinch of salt.
5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
6. Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
7. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
8. While the cookies cool, mix the remaining 1/2 cup granulated sugar with 1 tablespoon of cinnamon in a small bowl.
9. Once the cookies have cooled slightly, roll them in the cinnamon sugar mixture to coat evenly.
