- Combine ingredients in saucepan: Pour the milk and cornstarch mixture into the saucepan used to cook the strawberries. Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken, about 5-7 minutes.
- Add vanilla and blended strawberries: Once the mixture has thickened, remove the saucepan from heat. Stir in the vanilla extract and the blended strawberry mixture until well incorporated.
- Chill the pudding: Transfer the pudding to a heatproof bowl or individual serving dishes. Cover the surface of the pudding with plastic wrap (to prevent a skin from forming) and refrigerate for at least 2 hours, or until chilled and set.
