Instructions:
1. Preheat your oven to 375°F (190°C). Get that kitchen nice and warm!
2. In a mixing bowl, combine the cream cheese, mozzarella, spinach, parsley, basil, garlic powder, salt, and pepper. Mix it all up until it’s nice and creamy.
3. Take your chicken breasts and slice them in half horizontally to create thinner cutlets. You want them to be easy to roll up.
4. Lay the chicken cutlets flat on a clean surface. Spread a generous amount of the cream cheese mixture over each piece, leaving a little space at the edges.
5. Roll each chicken cutlet tightly from one end to the other, like a little herb-filled burrito! Secure them with toothpicks or tie them up with kitchen twine to keep everything snug.
6. In a large oven-safe skillet, heat the olive oil over medium heat. Once it’s hot, add the chicken twirls and sear them for about 3-4 minutes on each side until they’re golden brown.
7. Sprinkle the paprika over the top for a little extra flavor and color. Then, transfer the skillet to the preheated oven.
8. Bake for about 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
9. Once done, take them out and let them rest for a few minutes before removing the toothpicks or twine. Slice them into pinwheels for a beautiful presentation!
