- Preheat your oven: Set the oven to 375°F (190°C) to preheat while you prepare the ingredients.
- Prepare the peaches: Peel and slice the fresh peaches, removing the pits. Place the sliced peaches in a large mixing bowl.
- Mix the filling: Add 1 cup of granulated sugar, 1 teaspoon of vanilla extract, 1/4 teaspoon of ground cinnamon, and 1/4 teaspoon of ground nutmeg to the bowl of sliced peaches. Gently toss the mixture until the peaches are coated evenly. Set aside.
- Prepare the cobbler topping: In a separate bowl, combine 1 cup of all-purpose flour, 1 cup of granulated sugar, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Mix well.
- Add the butter: Pour in the melted unsalted butter into the dry mixture. Stir until the ingredients are combined. The mixture will be crumbly.
- Assemble the cobbler: Spread the peach mixture evenly into a baking dish (9×13 inches works well). Then, spoon the cobbler topping mixture over the peaches. Try to cover the peaches as evenly as possible.
- Add boiling water: Carefully drizzle 1/4 cup of boiling water over the topping. This will help create a delicious crust.
- Bake: Place the baking dish into the preheated oven. Bake for about 40-45 minutes or until the topping is golden brown and the peach filling is bubbly around the edges.
- Serve: Once baked, remove the peach cobbler from the oven and let it cool for a few minutes before serving. You can serve it warm, and it’s excellent with a scoop of vanilla ice cream or a dollop of whipped cream on top.
