For the Shortcrust Pastry
- 200 g flour
- 100 g cold butter, diced
- 50 g icing sugar
- 1 pinch of salt
- 1 egg yolk
- 2 tablespoons cold water

- 150 ml of whole liquid cream
- 50 ml of milk

For the Crumble
- 80 g flour
- 60 g cold butter in pieces
- 60 g of cassonade
