In a bowl, mix honey, garlic, and soy sauce. Pour over pork chops in the skillet and cook for another 2 minutes, allowing the sauce to thicken.
Meanwhile, boil potatoes until tender, then drain and mash with milk, butter, salt, and pepper.
Serve the pork chops on a bed of mashed potatoes, drizzling the honey garlic sauce on top.
