One of the most frequent mistakes is not drying potatoes properly after cutting them. Excess moisture impairs the crunchiness and can lead to a soft result instead of crispy. After cutting the potatoes into slices or cubes, be sure to dab them well with a cloth or absorbent paper to remove excess water.
2. Don’t Use Oil or Use It Too Much
Another common mistake is not to add enough oil or, on the contrary, use too much of it. Potatoes need a little oil to get that golden crunchiness, but without exaggerating.
