Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal later.
In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and fully melted.
Gently fold the rice krispies cereal into the melted chocolate and peanut butter mixture until well coated.
Pour the mixture into the prepared baking dish, spreading it evenly with a spatula.
Refrigerate for at least 2 hours, or until the bars are firm and set.
Once set, lift the bars out of the dish using the parchment paper overhang and cut into squares.
Variations & Tips
For those with nut allergies, you can substitute the peanut butter with sunflower seed butter or almond butter if preferred. To add a bit of extra flavor, consider mixing in a teaspoon of vanilla extract with the melted chocolate and peanut butter. If you want to make these bars a bit more festive, sprinkle some colorful candy sprinkles on top before refrigerating.
