Prepare the Crab Cake Mixture
In a medium-sized bowl, combine the crab meat, breadcrumbs, mayonnaise, Worcestershire sauce, Old Bay seasoning, Dijon mustard, one beaten egg, chopped parsley, and lemon zest.
Mix all ingredients until well combined.
Assemble the Egg Rolls
Lay an egg roll wrapper flat on a clean surface.
Spoon about two tablespoons of the crab mixture into the center of the wrapper.
Lightly brush the edges of the wrapper with beaten egg to help seal.
Fold in the sides and roll tightly, sealing the ends securely.
Fry the Egg Rolls
Heat oil in a deep skillet or deep fryer to 350°F (175°C).
Carefully place the rolls into the oil, avoiding overcrowding.
Fry for 2 to 3 minutes per side, or until golden brown and crispy.
Transfer to a paper towel-lined plate to drain excess oil.
Serve
Serve hot with your choice of dipping sauce. Popular options include:
