Ingredients:
1 can of whole tomatoes (28 ounces) including the juice.
2 cans of Rotel, which is diced tomatoes with green chilies, each can being 10 ounces.
1/4 cup of chopped onion
1 small piece of garlic, chopped
1 jalapeño pepper, cut into four pieces and thinly sliced.
1/4 teaspoon of sugar
1/4 teaspoon of salt 1/4 teaspoon of ground cumin
1/2 cup of cilantro (add more if desired!)
Juice of half a lime.
Instructions:
Put together tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Blend the salsa until it reaches the thickness you prefer, usually around 10 to 15 pulses. Try the seasonings with a tortilla chip and make changes if necessary.
Put the salsa in the fridge for at least one hour. Enjoy with tortilla chips or cheesy nachos.
