Ingredients:
– 4 boneless, skinless chicken breasts
– 4 cups fresh broccoli florets
– 1 can (10.5 oz) condensed cream of chicken soup
– 1/3 cup mayonnaise
– 1/3 cup sour cream
– 1 teaspoon lemon juice
– 1 1/2 cups shredded cheddar cheese
– 1/2 teaspoon curry powder (optional)
– Salt and pepper to taste
– Buttered breadcrumbs or crushed crackers (optional) for topping
Instructions:
1. Begin by lightly greasing your slow cooker’s insert with butter or cooking spray to prevent sticking.
2. Place the chicken breasts in the slow cooker and season them with salt and pepper.
3. In a medium-sized bowl, mix together the condensed cream of chicken soup, mayonnaise, sour cream, lemon juice, curry powder (if using), and half of the shredded cheddar cheese. Spread this mixture evenly over the chicken.
4. Next, add the fresh broccoli florets on top of the chicken and sauce mixture.
5. Cover the slow cooker and set it to cook on low for 5 to 6 hours, or on high for 3 to 4 hours until the chicken is cooked through and the broccoli is tender.
6. Once cooked, sprinkle the remaining cheddar cheese over the top and cover for an additional 20 minutes or until the cheese melts.
7. For a crunchy topping, you can briefly broil buttered breadcrumbs or crushed crackers in the oven until golden brown and sprinkle them over the dish just before serving.
8. Serve your Slow Cooker Broccoli Chicken Divan hot with your chosen sides and enjoy a homely and delightful meal.
