Directions:
Cook Tortellini: Boil a large pot of water and cook the tortellini according to package directions until tender. Drain and rinse with cold water to cool. Set aside.
Prepare Ingredients: While the pasta cooks, halve the grape tomatoes, dice the bell peppers and cucumber, finely chop the red onion, drain the black olives, and cube or shred the cheddar cheese.
Cook Turkey Bacon (if not pre-cooked): If using uncooked turkey bacon, cook it in a skillet until crispy, then crumble it. If using pre-cooked crumbles, measure out 1 cup.
Combine Salad: In a large bowl, mix together the cooled tortellini, tomatoes, bell peppers, cucumber, red onion, black olives, cheddar cheese, and turkey bacon.
Add Ranch Dressing: Add your favorite ranch dressing (approximately 1 cup, or to taste) and toss the salad until evenly coated.
Chill & Serve: Refrigerate the pasta salad for at least 30 minutes before serving to allow flavors to blend.
