Heat a pan over medium-high heat. Season shrimp with salt and pepper, and sauté with minced garlic in butter until pink and cooked through (about 3-4 minutes). Set aside.
Brush each slice of bread with melted butter and sprinkle with garlic.
Layer mozzarella and Parmesan cheese on two slices of bread.
Add sautéed shrimp on top of the cheese.
Close the sandwich with the remaining bread slices.
In the same pan, grill the sandwiches on medium heat, pressing down gently until golden brown and crispy on both sides, about 4-5 minutes per side.
Garnish with fresh parsley and serve with a side salad or chips. Enjoy your cheesy, garlicky shrimp grilled cheese
