Instructions
Make the batter:
Preheat oven to 180°C (350°F). Grease and line a 24cm (9.5-inch) baking dish.
Beat together the eggs, sugar and vanilla sugar until fluffy.
Mix in the yoghurt, milk, oil and salt.
Fold in the dry ingredients:
Sift together the flour and baking powder. Gradually fold in the wet ingredients.
Fold in the raisins.
Bake the cake:
Pour the batter into the baking dish and smooth the surface.
Bake for 35-40 minutes, until a toothpick inserted comes out clean.
Finish with the topping:
Cool the cake for 10 minutes. Spread the jam on top and sprinkle with coconut flour.
Serving suggestions
Enjoy with a hot drink such as tea or coffee.
Serve warm with whipped cream or ice cream.
