Directions:
1️⃣ Preheat Oven:Preheat your oven to 350°F (175°C).
2️⃣ Cook Ground Beef:In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
3️⃣ Add Seasoning:Add the taco seasoning mix and water to the skillet. Stir to combine and simmer for 5 minutes.
4️⃣ Mix in Beans and Tomatoes:Stir in the black beans and diced tomatoes with green chilies. Cook for an additional 2-3 minutes until heated through.
5️⃣ Layer in Baking Dish:In a greased 9×13-inch baking dish, spread half of the Fritos corn chips in an even layer. Pour the beef mixture over the chips, spreading it out evenly. Sprinkle with 1 cup of shredded cheddar cheese.
6️⃣ Top with Chips and Cheese:Top with the remaining Fritos and the rest of the shredded cheddar cheese.
7️⃣ Bake:Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
8️⃣ Add Toppings:Remove from the oven and let cool for a few minutes. Top with shredded lettuce, diced tomatoes, sliced black olives, and chopped green onions.
9️⃣ Serve:Serve with sour cream and salsa on the side.
