1. In a small bowl, mix together the garlic, thyme, rosemary, salt, and pepper.
2. Rub the herb and garlic mixture all over the pork roast, pressing it into the meat.
3. Heat the olive oil in a large skillet over medium-high heat. Sear the pork roast on all sides until it is browned.
4. Place the onion, carrots, and potatoes in the bottom of your slow cooker.
5. Lay the browned pork roast on top of the vegetables.
6. Pour the chicken broth around the sides of the pork in the slow cooker.
7. Cover and cook on low for 8-10 hours, or until the pork is tender and easily pulls apart with a fork.
8. Once cooked, remove the pork and vegetables from the slow cooker. Let the pork rest for a few minutes before slicing.
9. Serve with the vegetables and sauce from the slow cooker.
Variations & Tips
For a bit of sweetness, add a tablespoon of honey to the herb rub. If you have a picky eater who isn’t fond of vegetables, consider blending some of the veggies into the broth to create a tasty gravy. You can also substitute sweet potatoes for regular potatoes or add apples for a touch of autumn flair. If you’re feeling adventurous, throw in a dash of cumin for a slightly different, smoky flavor profile.
