Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
In a large bowl, combine the ground beef, cheddar cheese, parmesan cheese, bread crumbs, milk, beaten egg, chopped onion, garlic, Worcestershire sauce, salt, pepper, and paprika. Mix until well blended.
Transfer the meat mixture into the prepared loaf pan, pressing it down to shape it evenly.
In a small bowl, mix together the ketchup, brown sugar, and Dijon mustard. Spread this mixture evenly over the top of the meatloaf.
Bake in the preheated oven for 55-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (70°C).
Let the meatloaf rest for about 10 minutes before slicing and serving.
Variations & Tips
For picky eaters, you can hide some finely chopped veggies, such as bell peppers or carrots, in the meat mixture. If you prefer a spicier kick, add a dash of hot sauce or some chopped jalapeños. For a gluten-free version, substitute bread crumbs with gluten-free breadcrumbs or rolled oats. You can also experiment with different cheeses, like mozzarella or pepper jack, for a different flavor profile.
