Carrot blush is not a reason to toss out your carrots. Soaking them in cold water for about 10 minutes can restore their freshness and remove the white coating. Even if they still have the blush afterward, they’re safe to eat.
I used to feed the hens carrots that looked like this, but now I think twice! When veggies appear less than fresh, my go-to method is to roast them in a little olive oil for a side dish or to make soup. Hopefully, this advice helps you reduce waste in the future!
