Preheat your oven to 400°F (200°C).
In a small bowl, mix together the paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and black pepper.
Pat the cod fillets dry with paper towels. Rub each fillet with olive oil, then coat them generously with the spice mixture.
Place the fillets on a baking sheet lined with parchment paper.
Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
Serve the cod hot, with lemon wedges on the side for squeezing over the top.
Variations & Tips
For a milder version, reduce the amount of cayenne pepper or omit it altogether. If you have picky eaters, try serving the cod with a side of tartar sauce or a mild yogurt dip to balance the spices. You can also substitute cod with another white fish like tilapia or haddock if preferred. For an extra crispy texture, finish the cod under the broiler for the last 2 minutes of cooking.
