6 large sweet potatoes, peeled and sliced into 1/2-inch thick rounds
– 1/2 cup butter
– 2 cups sugar
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/2 teaspoon salt
– 1 tablespoon vanilla extract
Instructions:
1. In a large skillet, melt 1/2 cup of butter over medium heat.
2. Add 2 cups of sugar, 1 tsp ground cinnamon, 1/2 tsp ground nutmeg, and 1/2 tsp salt to the skillet. Stir until well combined.
3. Carefully add the sweet potato rounds to the skillet, coating them with the buttery sugar mixture.
4. Reduce the heat to low and cover the skillet. Simmer for 60 minutes or until sweet potatoes are tender, stirring occasionally.
5. Once sweet potatoes are tender, stir in 1 tbsp of vanilla extract.
6. Transfer candied sweet potatoes to a serving dish and drizzle with any remaining syrup.
