Instructions:
-
- Preheat oven and prepare baking sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Blend cottage cheese: In a food processor, blend the cottage cheese until it is completely smooth. This step is crucial for achieving the right texture.
-
- Combine ingredients: In a mixing bowl, combine the blended cottage cheese, grated Parmesan cheese, and the large egg. Mix thoroughly until all three ingredients are well combined and form a uniform batter.
- Spread onto baking sheet: Scoop the cheese mixture onto the prepared baking sheet. Using a spatula or the back of a spoon, spread the mixture out evenly into a thin layer, about 1/4 inch thick. Aim for a relatively uniform thickness for even cooking.
- Score into fry shapes: Using a knife or a pizza cutter, gently score the spread-out mixture into the shape of fries. You can make them long and thin or shorter and thicker, depending on your preference.
- Add optional Parmesan topping: If desired, sprinkle a little extra grated Parmesan cheese over the top of the scored “fries” for added flavor and crispness.
- Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the “fries” are golden brown and appear crispy around the edges. The baking time may vary slightly depending on your oven and the thickness of the mixture.
- Cool and separate: Once baked, remove the baking sheet from the oven and allow the low-carb fries to cool on the baking sheet for a few minutes. As they cool, they will firm up. After a few minutes, carefully separate the fries along the scored lines. They may still be a little delicate, so handle them gently.
Enjoy your cheesy and crispy 3-Ingredient Low Carb Fries! They can be served as a snack or a side dish.
