Preparation method:
Wash the vegetables thoroughly and dice them. To mellow their flavor, you can blanch the onion in boiling water beforehand.
If using chicken, dice or shred it. Vegetarian version? Smoked tofu works great too!
Place all ingredients in a large bowl.
In a separate bowl, prepare the sauce: mix well the yogurt, mayonnaise, garlic, mustard, lemon, salt and pepper.
Pour the dressing over the salad and toss gently until all the ingredients are well combined.
Sprinkle with fresh parsley and you’re done!
Serving and Storage Tips:
Best served cold: refrigerate for 30 minutes before serving.
Store in an airtight container in the refrigerator: up to 2 days.
Don’t add dressing to the salad ahead of time if you plan to eat it later: the vegetables may release water.
