Instructions:
Prepare the Potatoes:
Preheat your oven to 400°F (200°C).
Wash and scrub the potatoes thoroughly to remove any dirt. Pat them dry.
Pierce the potatoes a few times with a fork to allow steam to escape during baking.
Season the Potatoes:
Rub the potatoes with olive oil or butter and sprinkle with salt and pepper.
Optionally, sprinkle with fresh herbs like rosemary or thyme to add extra flavor.
Wrap with Bacon:
Take each potato and wrap it with 2 slices of bacon. You can overlap the slices slightly to ensure the potato is fully covered. For extra flavor, tuck some rosemary or thyme under the bacon strips.
Bake:
Place the wrapped potatoes on a baking sheet lined with parchment paper or foil.
Bake for 45–60 minutes, depending on the size of the potatoes. The potatoes are done when a fork easily goes through the center, and the bacon is crispy and golden.
Serve:
Remove the wrapped potatoes from the oven and let them cool slightly.
If desired, top with cheese and return to the oven for a few minutes to melt.
Serve with a dollop of sour cream or a favorite dipping sauce.

Cheese Stuffing: Before wrapping the potatoes, you can slice them slightly (not all the way through) and stuff them with cheese, garlic, or herbs for added flavor.
