Prepare the Dough:

In a large bowl, cream the softened butter and powdered sugar together using a hand or stand mixer until light and fluffy.

Add the vanilla extract, fresh lemon juice, and lemon zest. Mix until combined.

Mix Dry Ingredients:

In a separate bowl, whisk together the all-purpose flour and salt.

Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together. Be careful not to overmix.

Chill the Dough:

Divide the dough into two portions and shape each into a log about 1.5 inches in diameter. Wrap tightly in plastic wrap and refrigerate for at least 1-2 hours, or until firm.

Slice and Bake:

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

Remove the dough from the fridge and slice into 1/4-inch thick rounds. Place the cookies on the prepared baking sheets, leaving about 1 inch of space between them.

Bake for 10-12 minutes, or until the edges are just lightly golden. Do not overbake.

Cool the Cookies:

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Prepare the Lemon Glaze (Optional):

In a small bowl, whisk together the powdered sugar, fresh lemon juice, and lemon zest until smooth. Adjust the consistency with more sugar or juice as needed.

Glaze the Cookies:

Drizzle or spread the glaze over the cooled cookies. Let the glaze set for about 20-30 minutes before serving.
