Ingredients:
For the Patties:
- 1 cup cooked quinoa (or brown rice)
- 1 cup grated carrots
- 1 cup finely chopped zucchini (squeeze out excess moisture with a paper towel)
- 1/2 cup finely chopped onion
- 1 clove garlic , minced
- 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
- 1 large egg (or flax egg for vegan option: 1 tbsp ground flaxseed + 2.5 tbsp water)
- 1/4 cup grated Parmesan cheese (optional, omit for vegan version)
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil (for cooking)
For Serving (Optional):
- Burger buns
- Lettuce, tomato slices, avocado, or hummus
- Tahini sauce or yogurt dressing
