Get the Mold Ready:
Grease a muffin pan with butter and dust it with flour. For the most accurate results, choose a mold that fits 12 muffins.

Get the Batter Ready:

  1. In a mixing bowl, whisk the egg.
  2. Add the sugar, salt, and vanilla sugar, and stir until creamy.
  3. Gradually add the milk and vegetable oil, whisking constantly.
  4. In a separate bowl, mix the flour and baking powder.
  5. Slowly incorporate the flour mixture into the wet ingredients, whisking constantly.

Get the Topping Ready:

  1. After peeling, coring, and chopping the apple, toss it with the lemon juice to prevent browning.
  2. Add the chopped almonds and raisins to the apple mixture.

Mix the cinnamon and sugar together in a small bowl.

Put the Muffins Together:

  1. Pour the batter into the prepared muffin pan.
  2. Evenly distribute the apple, almond, and raisin mixture on top of the batter.
  3. Sprinkle the cinnamon and sugar mixture over the top.

Preheat the oven to 180Β°C (350Β°F) and bake for 20 to 25 minutes, or until a toothpick inserted in the middle comes out clean. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to finish cooling.

Optional: To make a glaze, spread apricot jam over the cooled muffin tops for an extra delicious touch.
