1 teaspoon granulated sugar
½ teaspoon salt
½ cup (115g) unsalted butter, chilled and cubed
¾ cup (180ml) cold buttermilk (or regular milk with 1 teaspoon vinegar or lemon juice)
2 tablespoons heavy cream or melted butter (for brushing)
