What You Need:
Three beaten eggs
Thawed 2 cups of mashed potatoes
one cup of Monterey jack cheese Jack cheese cut in half
1/4 cup of fresh chives, minced, plus more for garnish
Garnish with salt and pepper as desired.
Serve with sour cream, if desired.
Instructions
Get the oven hot, about 400 degrees Fahrenheit. Before setting away, lightly butter a 24-cup mini muffin pan.
Blend the mashed potatoes, eggs, 3/4 cup of grated cheese, and chives in a large bowl until well blended. Add salt and pepper according to your preference.
Spoon or scoop the potato mixture into the muffin pan cups that have been prepared, filling them almost to the top.
Sprinkle the remaining 1/4 cup of grated cheese over each puff.
Puff, set, and slightly golden brown after 15 to 20 minutes in the oven.
After 5 minutes of cooling, carefully remove the puffs from the tin using an offset spatula or butter knife.
Warm the dish and top with more chopped chives and sour cream, if preferred. Have fun!
