Chicken, Mushroom, and Spinach Lasagna

Ingredients
For the Chicken Filling:
- 2 large chicken breasts, cooked and shredded (or 3 cups rotisserie chicken)
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Mushroom and Spinach Filling:
- 2 tablespoons olive oil
- 1 lb (450g) mushrooms, sliced (button or cremini work well)
- 4 cups fresh spinach (or 10 oz frozen spinach, drained)
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Ricotta Mixture:
- 1 1/2 cups ricotta cheese
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Other Ingredients:
- 9-12 lasagna noodles (depending on your dish size, preferably no-boil noodles)
- 3 cups shredded mozzarella cheese
- 2 cups marinara or tomato sauce (optional for layering)
