Classic roast with vegetables
Ingredients:
β 3-4 lb chuck roast
β 2 tablespoons of olive oil
β Salt and pepper to taste
β 4 cloves of garlic, chopped
β 1 large onion chopped
β 4 large carrots, peeled and cut into large pieces
β 4 stalks of celery cut into large pieces
β 2 cups of beef broth
β 1 cup of red wine (optional)
β 1 can (14.5 oz) diced tomatoes
β 2 tablespoons of tomato paste
β 2 tablespoons Worcestershire sauce
β 2 teaspoons of dried thyme
β 2 teaspoons of dried rosemary
β 2 bay leaves
β Fresh parsley, chopped (for garnish)
