- Prepare the Tomatoes:
- Blanch the tomatoes to peel them easily. Cut a small “x” at the bottom of each tomato and drop them into boiling water for about 30 seconds or until the skin starts to peel away. Remove and place them in cold water. Peel off the skins.
- Remove the seeds and roughly chop the tomatoes.
- Cook the Base:
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onions and cook until they are soft and translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Simmer the Sauce:
- Add the chopped tomatoes to the pot.

- For a smoother sauce, use a blender or food processor to puree the sauce to your desired consistency.
