1. Preheat the Oven

  • Preheat your oven to 200°C (390°F). Grease a baking dish with vegetable oil to prevent sticking.

2. Prepare the Ingredients

  • Potatoes: Peel and slice or cube the potatoes. Boil them in salted water for about 10 minutes, or until they are slightly tender. Drain and set aside.
  • Spinach: Wash the spinach thoroughly and roughly chop it.
  • Onion: Chop the onion finely.

3. Sauté the Spinach and Onion

  • In a large skillet, heat a little oil over medium heat. Add the chopped onion and cook until it becomes translucent.
  • Add the spinach to the skillet and cook until it wilts down, about 2-3 minutes. Season with salt, pepper, and garlic powder.

4. Assemble the Bake

  • In a large bowl, whisk together the eggs and creamy soft cheese until smooth. Season with salt and pepper to taste.
  • Add the boiled potatoes, sautéed spinach, and onion mixture to the egg mixture. Stir gently to combine.
  • Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the grated mozzarella cheese on top.
